Beef up your busy schedule with convenient, nutritious ground beef dishes

Each fall, many families find themselves juggling back to school, harvest, sports and more, making it challenging to prepare nutritious meals. 

But the Nebraska Beef Council said incorporating ground beef into meal planning is a practical way to ease the hurdle. 

“I typically like to focus on recipes that include ground beef since it’s a very popular, versatile beef product, and it is really the perfect option for easy weeknight meals for the family,” said Mitch Rippe, NBC’s Director of Nutrition and Education. 

Rippe recently hosted a number of nutritional education outreach events across the state, including cooking demonstrations at the Nebraska State Fair. 

He said people often jokingly ask if they’ll be learning how to prepare a juicy ribeye, but he emphasized the importance of educating families on ways they can practically incorporate beef into their busy lifestyles. 

“During these sessions, I really tend to lean in on beef cut education,” he said. “I feel it’s really important for folks to understand where particular cuts of beef come from, their inherent characteristics, and then also how to best prepare those cuts to have the best eating experience possible with the protein that they enjoy.” 

He highlighted two dishes – a beef asparagus pasta toss meal and a one-dish beef stroganoff – to showcase how families can get nutritious meals that include multiple food groups in less than 30 minutes.

Rippe also suggested using stew meat for busy nights because it can be prepared in a slow cooker with a low heat over a long period of time.
