EASY CHEESEBURGER MAC CASSEROLE

This recipe is great for a last-minute meal in under 30 minutes!

From the Kitchen of: Haley Dietz | Alma, NE 

INGREDIENTS 

  • 1 lb ground beef 
  • 2/3 cup diced onion (approx. 1 medium onion) 
  • 2 cups milk 
  • 1 ¼ cups chicken broth 
  • 1 ½ cups elbow macaroni 
  • 1 tablespoon cornstarch 
  • 2 teaspoons garlic powder 
  • 1 teaspoon granulated sugar 
  • 1 teaspoon salt 
  • 1 teaspoon paprika 
  • ½ teaspoon black pepper 
  • 1 2/4 cups shredded sharp cheddar cheese 

DIRECTIONS 

In a small bowl, combine 1 tablespoon cornstarch, 2 teaspoons garlic powder, 1 teaspoon sugar, 1 teaspoon salt, 1 teaspoon paprika and ½ teaspoon black pepper. Set aside. 

Brown 1 lb ground beef and 2/3 cup diced onion. 

Add 2 cups milk, 1 ¼ cups chicken broth and 1 ½ cups elbow macaroni to the beef. Stir in the cornstarch and spice mixture. Bring to a boil. 

Reduce heat and simmer, covered, for 9-12 minutes or until pasta is cooked, stirring occasionally. Add more broth or water if needed. 

Remove from heat and stir in cheese until melted. Serve hot.

INGREDIENTS 

  • 3 lbs ground beef 
  • 1 lb sausage 
  • 1 can evaporated milk 
  • 1 cup oatmeal 
  • 1 cup cracker crumbs 
  • 2 eggs 
  • ½ cup onions, chopped 
  • 1 tsp garlic 
  • 2 tsp salt 
  • ½ tsp pepper 
  • 2 tsp chili powder 
  • Topping/Sauce (for one pan) 
  • 1 cup ketchup  
  • ½ cup brown sugar 
  • Liquid smoke 
  • Garlic powder 
  • Chopped onions 

DIRECTIONS (IN CINDI’S WORDS)

Make a ball. Will need two 9×13 pans. Cover with wax paper.  

Bake at 350 for 1 hr 15 min or until fully cooked. 

BAKED HAM AND CHEESE SLIDERS

Baked ham and cheese sliders are an easy crowd favorite, especially for harvest crews with littles tagging along!

BAKED HAM AND CHEESE SLIDERS

INGREDIENTS 

  • 1 pack Hawaiian dinner rolls (12 ct) 
  • 1 lb deli ham
  • 12 slices Swiss cheese
  • 12 slices cheddar cheese
  • 1 stick butter
  • Italian seasoning to taste
  • Garlic powder and/or garlic salt to taste

DIRECTIONS 

Preheat oven to 350. 

Slice the pack of Hawaiian dinner rolls in half and place the bottom half in a 9×13 pan. 

Layer 12 slices of Swiss cheese, deli ham and 12 slices of cheddar cheese on top. Place the top half of rolls on the sandwiches. 

Melt one stick of butter in a glass dish and mix with Italian seasoning and garlic salt and/or garlic powder to taste. Spread the mixture over the top of the rolls.  

Bake at 350 for 10-15 mins or until the cheese is melted and the bread has a little crunch to it.
