Las Vegas – Governor Pete Ricketts, Nebraska Department of Agriculture Director Steve Wellman and other state ag leaders spent time learning and sharing during the first day of an agriculture promotion tour in Las Vegas, Nevada.
On Thursday, the group met at the Wynn Resort and Casino to learn how chefs inside the resort’s 32 restaurants use beef from Nebraska.
The ag promotion tour includes:
- Nebraska Department of Agriculture,
- Greater Omaha Packing Company,
- Nebraska Cattlemen,
- Newport Meat of Nevada, and
- Several Nebraska beef producers
Recognized with more Forbes Travel Guide Five-Star Awards than any other independent hotel company in the world, Wynn Resorts offers luxurious accommodations. There are approximately 2,716 hotel rooms and suites at Wynn Las Vegas and 2,034 suites at Encore.
Attendees of the tour were given a behind-the-scenes glimpse of the massive resort operations.
According to one of the chef tour guides, the resort has more than 2,400 employees that work in the foodservice department. The warehouse facility covers approximately 65,000 square feet, making it one of the world’s largest facilities connected to a resort.

- 360 tons of beef processed in the butcher shop
- 71,014 pounds of lobster used per year
- 6,080,607 bottles of water used per year
- 55,899 one-liter bottles of Grey Goose vodka used per year
On the topic of beef, a chef told the group that the beef tenderloin is the top seller. In fact, it sells two-to-one compared to the next most popular cut.
The beef promotion trip continues Friday as the group travels to a local meat distributor.
